Spring on a plate. At 1890 Restaurant & Bar, we invite you to discover our new seasonal menu dedicated to one of the most distinctive ingredients of the season – asparagus. Executive Chef Josef Votoček and his team have created a menu that combines fresh spring flavours, seasonal lightness, and elegant culinary craftsmanship.
The menu explores asparagus in a variety of textures and flavours — from crispy asparagus tempura with mint aioli and a velvety cream of white asparagus soup to spring chicken served with green asparagus and peas. Guests can also enjoy a vegetarian dish featuring white and green asparagus with orecchiette pasta and parmesan sauce. The experience concludes with an original asparagus dessert paired with forest fruit.

An Evening with Perrier-Jouët at The Vault Lounge
You are warmly invited to an exceptional evening where the elegance of French champagne meets the intimate atmosphere of our historic vault. On 16th June from 18:00, The Vault Lounge opens its doors to a select group of guests for a limited champagne experience with Perrier-Jouët — a house that has been a symbol of champagne mastery and the art of living for over two centuries.
The evening begins with a welcome drink, followed by a guided tasting led personally by the Perrier-Jouët brand sommelier. The tasting features four champagnes, among them the rare Belle Époque:
- Perrier-Jouët Grand Brut
- Perrier-Jouët Blason Rosé
- Perrier-Jouët Blanc de Blancs
- Perrier-Jouët Belle Époque
Chef Josef Votoček has crafted carefully composed canapés, designed to bring out the character of each champagne to the fullest.

A new Spring / Summer menu arrives, shaped by the rhythm of the season and the evolving vision of the kitchen.
Created by Executive Chef Josef Votoček and his team, the new à la carte selection celebrates authentic flavours, seasonal ingredients, and precise craftsmanship—from the first savoury notes to the final sweet expression.
Among the highlights are scallops with tarragon and oyster emulsion, offering a delicate balance of freshness and depth, and veal loin with chanterelles and bordelaise, a dish rooted in classic technique yet presented with a contemporary lightness. A modern plant-forward interpretation of slow-roasted pointed cabbage with miso and almonds brings surprising richness and complexity.
The experience concludes with desserts by Pastry Chef Anička Vávrová, where flavour, texture, and elegance come together in a refined final chapter.
Each dish reflects the philosophy of the restaurant—bringing together seasonal produce, thoughtful sourcing, and a quiet sense of refinement that defines the experience.
