1890 Restaurant & Bar unveils its Winter Menu 2025, created by Executive Chef Josef Votoček and his team. The menu celebrates authentic flavours, seasonal ingredients, and precise craftsmanship – from the first savoury bite to the sweet finale.
Among the highlights is the beef tartare enhanced with beef garum, a fermented sauce with roots dating back to ancient times, bringing depth and umami richness to the dish. The mushroom risotto reflects the chef’s personal passion for foraging, turning forest treasures into a comforting yet refined creation.
The honey sponge dessert, made with honey, pollen, and propolis from the Carlo IV rooftop beehives, connects the culinary experience with the restaurant’s sustainable philosophy and the natural charm of the city.
Each dish reflects 1890’s philosophy – blending modern techniques, local inspiration, and timeless elegance.
