With the warmer season comes a fresh new à la carte menu at 1890 Restaurant. Created by Executive Chef Josef Votoček, the menu celebrates seasonal ingredients from local suppliers, blending sustainability with a modern culinary approach.
Among the starters, the pikeperch ceviche with lime, avocado and grapes stands out for its brightness and balance—an ideal way to begin your dining experience. The popular mix & match concept allows you to build your own combination of meat, sauce, and side dish to suit your preferences.
The signature dish of the season is a perfectly cooked lamb cutlet, served with chimichurri, grilled pepper purée, onion chips, and potato fondant. To finish, indulge in a white chocolate dessert with banana and hazelnuts—a refined and memorable end to your meal.
